Luís Baena, recently nominated as Executive Chef of Tivoli Hotels, is responsible for the creation and implementation of a new view on Portuguese cuisine. Very personal, very distinct, his signature is his experimentation with, and combination of, what he has experienced in his 25 year long career. He has worked in several restaurants internationally, and as the Executive Chef of many 5-star hotels. He has colloaborated with gastronomic mega stars such as Paul Bocuse and Joël Robuchon.
