Luís Baena, Tivoli Hotels’ recently appointed Executive Chef, is responsible for the  formulation and implementation of a new take on Portuguese cuisine. Never afraid to experiment, he can call upon the many influences and lessons in a career of over 25 years. His cuisine is always personal, always distinctive, reflecting his extensive travels and experiences. The cities in which he has worked in restaurants include Brussels, Lisbon, Macau Hong Kong and Rio de Janeiro, and he has been the Executive Chef at several 5 star hotels. He  has learnt and worked with some of the most important international chefs, such as Paul Bocuse and Joël Robuchon.
